What makes this easy is that you start with a can of spiced pumpkin pie mix and follow the directions. Here's a look at all the ingredients needed to make this delicious Halloween and Thanksgiving treat.
Once the dry ingredients are mixed together, mix together the wet ingredients. They should be in 2 separate bowls with the wet ingredients in the larger bowl since this is were everything is going to end up.
Fold the dry ingredients into the moist mixture about 1/3 at a time. Once the first batch is folded in then add the next 1/3 and so on.
Mix until you get a fully combined batter. It will be light and creamy like a cake batter but with small pumpkin clumps.
Now place the batter in a 10" to 12" bread pan. If it is not a non-stick pan, use a small bit of butter & flower to coat the inside of your bread pan.
Now bake for 50 to 60 minutes at 350 degrees.
At 50 minutes pull out the loaf and use a toothpick to see if the bread is finished. If you poke the toothpick into the loaf and pull it out, it is done when the toothpick comes out clean. If there is a coating of doughy batter, then you need to cook longer.
Once complete, remove from oven and let stand for 10 to 20 minutes.
Now it is ready to serve. Here are a couple of suggestions;
Serve warm with whipped cream or vanilla ice cream
Serve lightly toasted for breakfast,
Just cut and slice for a snack.
My preference is just slice and eat though I do admit it tastes pretty delicious just after it is cooked and my preference is the end piece so I need to be quick because it goes fast in my house!
